La VI región tiene un desafío no menor: queremos apostar a que efectivamente pasemos de ser un territorio agrícola a un destino gastronómico. Pues, si queremos hacerlo, debemos tomar la decisión política de impulsar un conjunto de medidas de fomento, educación, formación, información que nos permitan avanzar en esa dirección.

Durante 3 días la Universidad de O’Higgins desarrolló en la Casa de la Cultura el festival gastronómico La Despensa de O’Higgins, en el marco de un proyecto FIC de eco innovación agroalimentaria.
Relevar el patrimonio gastronómico de un territorio es un desafío que muchos países (España, Francia, Tailandia, Perú) han asumido convencidos que la comida, es el elemento transversal que une a todos los habitantes; quiero decir, tod@s comemos y cada territorio entrega su propia despensa a sus habitantes y a quienes los visitan.
Como decía el profesor Lacoste, uno de los hombres que marcó un punto de quiebre con su publicación Patrimonio y desarrollo territorial, Colección Ideas, producto también de otro FIC, el de Rutas de la Patria Nueva, a Francia, los 50 millones de turistas no van buscando sol y playa, van buscando otra joya francesa: su gastronomía y las especificidades que ella toma según la región de ese país europeo. Algo similar sucede en España con su exquisita variabilidad y oferta territorial. En fin, Pablo Lacoste fue quien empezó a mostrarnos, a partir de un exhaustivo estudio, que tenemos historia agroalimentaria regional y que O’Higgins puede ser un destino gastronómico; que contamos con insumos de cordillera a mar de primera calidad y que nos tenemos “que creer el cuento”, como lo decía Pamela Villagra, periodista experta en gastronomía y turismo gastronómico.
Pila Rodríguez, Jaime Jiménez, Fabián Gallardo, El Male y el Nico Pérez son algunos de los nombres de l@s cociner@s que ayudaron a “activar” esta feria, donde el comer y beber, conversar, reír y pasársela bien, eran las claves. Una feria que muchos decían, debiera ser costumbre y poder contar con ella una vez al mes, donde productores locales puedan mostrar de manera directa sus productos; tomates rosados, chacolí y agua ardiente de Doñihue, cordero y quinoa del Secano, procesados veganos y de los otros, snack de cochayuyo, repostería. En fin, todo lo que se requiere para ser feliz.
