La miel, el gran superalimento

La miel es un superalimento que no debe faltar en nuestro hogar, un fluido dulce y viscoso que contiene una gran diversidad de propiedades nutricionales y beneficios terapéuticos. Pero ¿qué entendemos por miel? Según la Organización de las Naciones Unidas para la Agricultura y la Alimentación y la Organización Mundial de la Salud (FAO/WHO, 2001), se entiende por miel la sustancia dulce natural producida por las abejas obreras, a partir del néctar de las flores o de exudaciones de otras partes vivas de las flores o presentes en ellas, que las abejas recogen, transforman y combinan con sustancias específicas propias, almacenan y dejan en panales para que maduren.

Para nuestro país, la definición la establece el Artículo 393, párrafo III del Reglamento Sanitario de los Alimentos del Ministerio de Salud de Chile, donde dice: “la denominación de «miel» o «miel de abeja» o «miel virgen” está sólo y exclusivamente reservada para designar el producto natural elaborado por la abeja Apis melífera, con el néctar de las flores y exudados de plantas aromáticas”

Cuando hablamos de calidad, cada país tiene sus propias disposiciones respecto de los parámetros que serán aceptados para definir si una miel cumple o no con lo mínimo para considerarse de calidad. El Codex Alimentarius es la base para hablar de esto, y es aceptado en todo el mundo como parámetro internacional.

El Codex Alimentarius dice: “La miel no deberá tener ningún sabor, aroma o contaminación inaceptable que haya sido absorbido de una materia extraña durante su elaboración y almacenamiento. La miel no deberá haber comenzado a fermentar o producir efervescencia. No deberá calentarse la miel en medida tal que se menoscaben su composición y calidad esenciales” (FAO/WHO, 2001).

Es por esto que existen también las buenas prácticas apícolas para que durante todo el proceso de recolección, cosecha y extracción de la miel sea hecho de modo inocuo, ya que no hay que olvidar que estamos trabajando con un alimento. Sabemos de dónde proviene y qué parámetros debe tener para asegurar su calidad, pero ¿de qué está compuesta? La miel es una solución sobresaturada de azúcares, sobre un 80%, y solo compuesta en un 18% por agua. La proporción de estos azúcares dependerá de las plantas a las que las abejas han visitado para recoger su néctar, pero en su mayoría son fructosa (media de 38%) y glucosa (media de 31%) y, minoritariamente, sacarosa y otros.

La cristalización es un proceso natural que dependerá de la temperatura, humedad y composición. Es decir, al bajar la temperatura y haber menor humedad, la cristalización será más rápida, al igual que la composición de azúcares. Si contiene mayor porcentaje de glucosa que de fructosa, se cristalizará antes.

Este alimento contiene muchas propiedades nutricionales, lleno de vitaminas (C, B1, B2, B3, B5) y minerales (Potasio, Calcio, Hierro, Fósforo, etc), sin grasas ni colesterol, rica en antioxidantes y con muchos beneficios para la salud. Su consumo mejora el sistema inmunológico, gracias a sus propiedades antibacterianas, antifúngicas, antiinflamatorias y cicatrizantes. Es una fuente estimulante que ayuda a combatir los momentos de agotamiento físico, regula los niveles de colesterol, mejora el sueño, evita el estreñimiento y muchísimos otros beneficios.

Para mantener la calidad de la miel se recomienda no calentarla a más de 40°C, por la pérdida de antioxidantes, aromas, vitaminas y minerales. Una forma ideal de almacenamiento es en un lugar fresco y seco, bien sellado y sin exposición directa a la luz solar. Recordar que la miel es higroscópica, es decir, capaz de absorber humedad de ambiente, pudiendo así correr el riesgo de fermentación.

Este maravilloso alimento se crea por un proceso natural que solo las abejas saben hacer. A través de una gran organización social, basada en funciones, según su edad, las abejas obreras, al cumplir 21 días de nacidas, comienzan a realizar labores fuera de la colmena, como el pecoreo o forrajeo, que significa la recolección del néctar de las flores. Las abejas liban el néctar con su lengua y lo almacenan en su buche melario o estómago de la miel, modificando el pH y lo trasladan hasta la colmena. Una vez allí, el proceso continúa a través de la trofalaxia, pasando el néctar de abeja en abeja, incorporando enzimas que realizan la descomposición de los azúcares en compuestos más sencillos (fructosa y glucosa) y, a su vez, disminuyendo el porcentaje de humedad de un 80 a un 20 por ciento, aproximadamente. Lo almacenan en las celdas de sus panales y, con el calor y el movimiento de sus alas, ajustan la humedad a un 18%. Para garantizar la correcta conservación de la miel, lo sellan con una capa de cera llamada opérculo. Este porcentaje de un 18% es ideal para que la miel pueda conservarse y se puede medir a través de un refractómetro.

Finalmente, el apicultor extrae solo un excedente de la miel que recolecta la abeja obrera o pecoreadora. Esta puede variar en color, olor, textura y sabor, características que son dadas por el origen floral. La abeja melífera no solo produce miel, también otros productos como polen, propóleo que recolectan del entorno y jalea real, cera y apitoxina, creadas por ellas mismas. Pero la función más importante es la polinización. Más de un 75% de nuestros alimentos dependen de la labor de insectos polinizadores, entre los cuales las abejas juegan un importantísimo rol (FAO, 2018), aportando a nuestra alimentación frutas, verduras, frutos secos y semillas diversas y de calidad.

Apis mellifera, al igual que otros insectos polinizadores, se encuentra peligro y, parte de ello, se debe a manejos inadecuados o falta de atención por parte del apicultor, pero también por un ambiente enfermo. Las prácticas agrícolas intensivas, pérdida de hábitats, el uso inadecuado de plaguicidas, especies exóticas invasoras, suelos degradados, enfermedades, plagas y el cambio climático, son algunos de los factores que amenazan su supervivencia.

Hoy sabemos que las abejas son clave para la biodiversidad y nuestra vida, y que sin abejas no hay alimentos ni tampoco su exquisita miel. Como apicultor hay capacitarse constantemente, preocuparse de la sanidad y la nutrición y no olvidar respetar y regenerar el entorno, al igual que el consumidor consciente, porque somos parte de la naturaleza.
