La riqueza de nuestra basura

El principal mercado mayorista de frutas y verduras del país, recogió el guante del reciclaje de sus residuos y se propone en 2030 aprovechar todos sus productos vegetales desechados para destinarlos a consumo humano, animal y para la fabricación de compost.

¿Cuánto sale el costo de llevar basura al vertedero cada mes? Con esta pregunta, inicio mi recorrido por la valorización de residuos en el mercado Lo Valledor de Santiago, el mayor terminal de compraventa de frutas y verduras del país. El transporte en un camión cuesta alrededor de $3.500.000 por mes, 42.000.000 al año. La buena noticia es que ya no es plata tirada a la basura porque, en un cuidadoso diseño de economía circular, Lo Valledor ha sido capaz de transitar desde la cultura de lo desechable a la comprensión de la riqueza social, ecológica y monetaria que significa hacerse cargo de los residuos. Con ello, han puesto en valor eso que para algunos, hasta hace unos pocos años, era basura. 

Para conocer de este modelo que apunta a la economía circular regenerativa, Katerine Zuñiga vino a Lo Valledor desde la Vega de Rancagua, acompañada de la diputada Marta Gonzalez y los concejales Emerson Avendaño y Hugo Guzmán. Junto a representantes del ministerio de Agricultura, compartieron con el director ejecutivo del mercado mayorista, Hugo Espinoza, David Duarte, encargado de Medio Ambiente y Romina Correa, jefa de operaciones del Banco de Alimentos.

El modelo que conocimos, que es muy de sentido común e integral, parte por la observación de que en los desechos orgánicos que produce el terminal, se encuentran frutas o verduras altamente nutritivas, pero que, por alguna razón estética o temporal, ya no podían ser consideradas aptas para la venta. Entonces, surge la idea de hacer el Banco de Alimentos, que se encarga de la separación y almacenaje de estos productos, incluyendo conservación en frío, para ser donados a instituciones que trabajan con personas necesitadas, ollas comunes, hogares, comedores solidarios, entre otras, a los que entregan 2.500 toneladas de alimentos cada mes. 

Aparte, están las 500 toneladas mensuales de residuos no aptas para el consumo humano, pero sí son una buena fuente de hidratación y nutrición para animales que están sufriendo por la sequía, las que, en convenio con la fundación ReAlim, llevan a la zonas de Paine y Cajón del Maipo.

Por último, otras 800 toneladas de residuos son convertidas en compost por la empresa Megambiente, la que se obliga, mediante un convenio, a devolver parte de él a Lo Valledor que, a su vez, dona a municipios para nutrir suelo de áreas verdes a cinco colegios, en los que están iniciando un programa de huertos escolares y, a través de INDAP, a campesinos y campesinas que nutren el suelo para obtener hortalizas que llegan nuevamente a Lo Valledor, reiniciando esta cadena de valor.

La basura, producto exclusivamente humano

El único animal que genera basura es el ser humano. Realmente, esta frase es muy impactante. Tanto como sorprenderse de cómo el fruto de la visión y las voluntades de un grupo humano revierte esto, que es tan absurdo. 

La concientización en este proceso ha sido muy importante, y por eso el rol de la jefa de operaciones del Banco de Alimentos, Romina Correa, ha sido tan relevante, motivando, informando y coordinando a los choferes y vendedores del mercado.También, Hugo Espinoza, director ejecutivo del Mercado y de la fundación, dice que han tenido que hacer un trabajo de hormiga, incluyendo material audiovisual para que las personas se dieran cuenta de cómo se utilizan sus productos, que no son revendidos, sino que alimentan a personas necesitadas. En 2021 lograron revalorizar el 36% de los residuos y, en lo que va de este año, ya han llegado al 43%; en 2023, esperan llegar al 50% y su meta, en 2030 ,es darle valor a la totalidad.

No solo manejan los desechos orgánicos, también tienen un sistema colaborativo para el manejo de los residuos sólidos, como cartón, plástico, vidrio y metal. Para esto, han tejido una alianza con recicladores de base que los apoyan en las labores de recolección, clasificación, manipulación y traslado a un punto de acopio donde son retirados y comprados por empresas del rubro del reciclaje. El dinero obtenido es distribuido en el mercado para mantener todo este sistema de acopio y el sustento de los recicladores de base.

Una oportunidad en la crisis

La experiencia de Lo Valledor nos lleva a pensar en el valor de la acción colaborativa en pos del reciclaje y en la oportunidad que genera. Sabido es que estamos en una de las sequías más prolongadas, enfrentando una crisis hídrica y el avance del proceso de desertificación. Por ello, incorporar este modelo circular de puesta en valor de los desechos es muy importante en la región, pero siempre en un contexto de pertinencia territorial. 

Rancagua, centro urbano, está rodeado de campo, de agricultura familiar campesina, cada provincia y ciudad tiene sus ferias libres, y sus cultivos que rodean estas urbes. ¿Qué pasaría si en vez de enviar basura, la ciudad nos enviara nutrientes al campo? En la ruralidad, muchos jóvenes se desalientan y dejan el campo por falta de oportunidades, y acá tenemos un gran tesoro. Así como los recicladores de base se reunieron, los campesinos y campesinas se podrían unir cooperativamente para elaborar compost, con lo que no solo estarán dando una respuesta ideal a la problemática por la escasez de fertilizante químico importado, sino que también darán un paso gigante en la restauración de la vida del suelo. Con ello, no solo tenemos alimentos fuertes, sanos y saludables, también tenemos un arma de vida para detener el desierto y la posibilidad de que nuestros suelos vuelvan a retener humedad y que los cuerpos vegetales puedan ser más frondosos para, de esta forma, aportar a restablecer el ciclo hídrico y el fortalecimiento de sumideros de carbono capaces de apoyar la lucha contra el calentamiento global. Simple y bonito, solo hay que ver el problema para encontrar la solución.
