Nadie es profeta en su tierra.
Y un Orueta, Juan José, heredero de la dinastía que instaló sus reales en la ferretería de calle San Martín al lado del teatro San Martín en Rancagua, da que hablar desde Curicó, su tierra adoptiva desde 2014, a todo el mundo. Y lo hace con helados de esos experimentales, tan lejanos de los clásicos de vainilla o pasas al ron, como familiares de cuesco de palta liofilizada o aceite balsámico.
Chef y hotelero, la historia de Juan José es de emprendimiento, pero también de resistencia.
Cuenta que, en 2014, con 27 años, laborando a tres pistas en un hotel, una academia y una empresa de servicios en gastronomía, el cuerpo le gritó que quería bajarse y lo precipitó en un accidente vascular. Con su esposa María Angélica y entonces una hija, decidieron enrumbar a Curicó, la tierra de ella, donde luego de una convalecencia importante, iniciaron un nuevo capítulo, esta vez con una sanguchería y una cafetería, La Obra, nombre en el que se reunía su apellido y el de ella, Bravo.
La crónica en medios de prensa dice que en las visitas de amigos gustaba de agasajarlos con helado, habilidad que aprendió en una estada en San Sebastián, País Vasco, antes de su colapso de salud. La recepción de sus comensales fue tan buena que decidió agregar la heladería a sus dos negocios, pero aprendiendo con los expertos, a los que fue a ver al Mediterráneo, desde donde luego trajo máquinas. Abrió la nueva oferta apenas unos meses antes del inicio de la pandemia, por lo que el encierro lo obligó a la distribución a domicilio y fueron los helados los que salvaron el negocio. Tanto, que una vez abierto el espacio público, decidieron solo focalizarse en los helados.
De ahí a participar en el Gelato Festival World Master, había un paso. En 2021 clasificó entre 40 masters heladeros del mundo con un helado de palta, pimienta rosada, sal de la Araucanía, chocolate blanco, cuesco de palta liofilizado, miel de Teno, limón curicano y vainilla. Obtuvo el quinto lugar.
En 2022, La Obra clasificó en lugar 22 en el ranking de mejores heladerías y este año el lugar 23 y, por cierto, fue la heladería latinoamericana top.
Nadie es profeta en su tierra y más de alguien dudaría que un heladero pudiera serlo. Pero Juan José Orueta saltó ya la valla de Los Andes para transformarse en un referente del sabor de uno de los postres más apetecidos, en invierno y verano, desde el lugar que eligió para vivir a escala humana, Curicó.
